Corned beef, sauerkraut, swiss cheese, & mashed potatoes all combined in one tasty casserole.
Preheat oven to 400. In large bowl, stir together potatoes, eggs, and milk until well combined. Stir in corned beef, sauerkraut, and mustard. Set aside 2 tbsp. of cheese. Stir remaining cheese into potatoe mixture. Pour into greased 8x8 baking dish. Top with 2 tbsp. of cheese. Bake 15-20 minutes or until top is golden.
