To Prepare the Dough:
Combine sugar, salt, yeast and 1-3/4 cups flour in a large mixing bowl. In separate bowl, combine milk, water, eggs and shortening and heat until warm. Add to flour mixture and beat at low speed for 1 minute. Continue beating at high speed for 3 more minutes, slowly adding the remaining flour. The dough will be sticky. Remove from bowl and knead dough until smooth. Put in bowl and cover with plastic wrap. Let rest on the counter for 20 minutes. The dough will expand 2-3 times its original size, so be sure your bowl is large enough that it will not overflow.
To Prepare the Filling:
Brown ground beef and onion. Remove beef mixture from skillet and set aside. Wilt cabbage and butter in the skillet for 3-5 minutes (cabbage should be soft and translucent). Combine cabbage, ground beef, shredded cheese, salt and pepper.
To Assemble the Runzas:
Roll dough very thin and cut into 7 inch squares. Spoon about 3 tablespoons of filling in center of each square. Fold corners of the dough to the center and pinch closed. Place smooth side up on greased baking sheet. Let rest in a warm place for 40-60 minutes (dough will continue to rise). Bake at 330 degrees for 20 minutes or until dough is golden brown.
Plan to block out an afternoon when making this recipe. The runzas freeze excellent and warm up well in the microwave for a quick lunch, so I typically double or triple the recipe and freeze the rest.
