Sour Cream with a twist!
1. Prepare Cream (first 5 ingrediants): In small saucepan, heat cream and sugar on med., stirring until sugar dissolves. Remove from heat, seat aside!
2. In another small saucepan, sprinkle gelatin over 1/2C cold water and let stand 5 min. to soften. Heat on med. until gelatin dissolves, stirring. Stir gelatin mixture into cream mixture. Transfer to med. bowl, then stir in sour cream and vanilla. Cover and refrigerate until mixture thickens to consistency of yogurt, about 30-45 min.
3. Prepare raspberry sauce: In small saucepan on med., heat preserves and lemon juice until hot. Press through fine-mesh sieve into small bowl, cool completely.
4. Layer cream mixture and raspberry sauce in 6 parfaits or martini glasses or wine glasses. Cover each with plastic wrap and refrigerate until set, at least 2 hours and up to overnight. Top with fresh raspberries before serving.
