Line a baking sheet with parchment.
Warm olive oil in skillet over medium heat. Saute onion and garlic until light golden, 3 to 5 minutes. Let cool.
Mix ricotta, parsley, prosciutto and Parmesan in a bowl. Stir in cooled onion and garlic. Season with salt and pepper.
Roll pizza dough into a 13 inch circle. Fold dough over the rolling pin and transfer to lined baking sheet.
Spread filling evenly over dough, leaving a 2 inch border. Top with artichokes.
Fold uncovered border of dough over filling, letting dough pleat as you lift it and work your way around pie. Dot artichokes with 1/2 tablespoon of olive oil and brush sides of dough with another 1/2 tablespoon of olive oil. Sprinkle with 1 tablespoon grated Parmesan.
Bake until golden and bubbly, 20 to 25 minutes.
