Instructions
Heat 1 tablespoon oil in 12-inch nonstick skillet over medium-low heat until shimmering. Stir in onions, 1 teaspoon thyme, sugar, and 1/4 teaspoon salt. Cover and cook, stirring occasionally, until onions have softened and released their liquid, about 10 minutes. Uncover, increase heat to medium-high and continue to cook, stirring often, until onions are deeply browned, 10 to 15 minutes.

Adjust oven rack to lowest position and heat oven to 500 degrees. Brush rimmed baking sheet with 1 tablespoon oil. Place dough on lightly floured counter. Press and roll dough into 14 by 8-inch oval. Transfer dough to prepared baking sheet, reshape as needed, and gently dimple with your fingertips.

Brush dough with remaining 2 tablespoons oil and season with pepper. Scatter caramelized onions, goat cheese and remaining 1/4 teaspoon thyme evenly over dough, leaving 1/2- inch border around edge.

Bake until tart is deep golden brown, 8 to 12 minutes, rotating sheet halfway through baking. Sprinkle with parsley, cut into 16 equal pieces and serve warm.
*Caramelized onions, prepared through step 1, can be refrigerated for up to 3 days.
*Assembled tart, prepared through step 3, can be held at room temperature for up to 4 hours before baking.
Topped with caramelized onions, fresh herbs, and goat cheese, this rustic tart is a winning appetizer that is easy to make, especially if you rely on store-bought pizza dough. Make sure your oven is really hot (500 degrees), as this is crucial for a crisp crust. Also, we found it best to use just a small amount of very flavorful toppings to prevent the thin dough from being weighed down. If your pizza dough is refrigerated, let it come to room temperature for 3 minutes before using.
