spread mirepoix in baking dish and place chicken pieces on top.
Par bake (30 minutes or until starting to brown) chicken.
Place chicken pieces in pot and add 1liter of chicken stock and 500ml water, bring to boil and simmer gently for 1 hour
Remove chicken and allow to cool
Skim 'sludge' from top of stock.
De-bone and shred chicken meat back into stock
Add other liter of stock and bring back to boil, add grated carrots and zicchini and remaining water, season to taste and simmer gently for 30 mins
Add Pasta and simmer for 20 mins and serve
If you are up to it.. make your own Stock with Chicken carcasses and mirepoix par roasted then simmered for hours before straining.
