Great served with Chicken, Lemon, and Olive Stew.
1. Position a rack in the center of the oven and heat oven to 350.
2. Put couscous in baking dish; set aside.
3. Heat broth, butter, saffron and salt over med-high till broth is hot. Pour the mixture over the couscous and mix well.
4. Cover baking dish with foil and bake 10-12 minutes till liquid is absorbed. Let sit at room temp for 5 minutes. Drizzle a small amount of olive oil over it. Use fingers or fork to gently fluff and mix, breaking apart any clumps.
