Mix all herbs and spices together except sage, set aside. Whisk egg and olive oil together, set aside. Place cracker crumbs on a plate.
Rub herbs and spices into chicken.
Dip chicken into egg and oil mixture, then roll into bread crumbs.
Sprinkle generously the sage.
Refrigerate chicken for 45 minutes
Place chicken in oven pre-heated to 400 F for approximately 45 min.
I take a small grilling rack, place foil under it and spray the top with olive oil to place in fridge. This allows the crumbs on the bottom to stay intact. After removing from the refrigerator, I place the grilling rack onto a baking pan and put the whole assembly in the oven. The whole thing comes out with crispy crust. For guests who don't have the tongue for spicy, cut back on cumin and cayenne.
