Soak the Basmati rice in a vessel for 30 minutes and drain water.
Cut the vegetables into 1”inch long pieces.
Fry saunf, cumin seeds, coriander seeds, black pepper.After frying powder it and keep aside.
Take 5tbsp of ghee in a vessel add kaju & raisins keep them aside add bay leaves,cinnamon stick, cloves, cardamom big and small in the ghee fry for about half minute and then add sliced onions & chillies fry till they get pink in colour add ginger garlic paste stir it well when the mixture turns into golden brown add chopped vegetables fry for 5minutes in the medium flame. Then add rice salt and turmeric powder stir well till the ghee separates from the ingredients.Then pour the mixture(water+coconut milk)into it, stir it for once and cover it then turn into high flame. When the rice get cooked add one table spoon ghee .the powder of saunf, cumin seeds, coriander&black pepper and garam masala turn the flame into simmer for 10-15 minutes. Decorate with Kaju , Raisins & coriander leaves. Your vegetable Biryani is ready. It can serve with Kuchumber/(Dhaniapatta+Pudina patta+curd) chatni.
