If you like shrimp cocktail, you will love this jellied version. Displayed on a bed of lettuce it is a wonderful starter.
1. For the sauce, mix all the ingredients in a small bowl until well combined and set in refrigerator.
2. For the aspic, whisk both gelatins and the water in a large bowl until dissolved. Add the next 6 ingrediants and mix until combined. Place in refrigerator until mixture is slightly set, about 45 minutes. (It will have the consistency of egg whites.) Whisk the mixture until well combined, then fold in the remaining ingredients.
3. Spray a 9-inch loaf pan with cooking spray. Pour in the aspic and refrigerate, uncovered, until set, about 4 more hours or up to 1 day. Cut into 6-8 servings and place on salad plates with a leaf of butter lettuce. Spoon a dolup of sauce on top and more on the table for those who want more.
Note: Wait to cut the cheese until ready to fold into the aspic. When cutting up then cream cheese it is easier if you freeze the cheese for a few minutes, then heat your knife. You will get the hang of it after a few cuts. you can always put it back in the freezer if needed.
