Chicken, sausage and shrimp make for a good gumbo
Make a roux using the oil and flour (stir until turns slightly brown).
Saute' onion, green, red, and black pepper and garlic.
Gradually stir in water (or chicken broth) and chicken. Bring to a boil. Simmer.
Add sausage and okra. Add shrimp shortly before serving.
Serve over rice.
Roux can be made a few days ahead of time.
I usually add around 2 more cups of broth.
Add Tony's or other Cajun seasoning to each serving to taste.
