Pat the salmon dry with kitchen towel and season generously with salt. Leave to one side.
Cut the top and bottom from both oranges and the grapefruit. Place on one end on a chopping board, then, using a sharp knife, slice off the pith and skin in downward strips, following the line of the fruit. Now, holding each fruit in your hand like a tennis ball, over a small bowl to catch the juice, carefully slice each side of the papery membranes to release the segments. Add any juices from the board and squeeze in the juice from the empty membranes.
Pour the orange and grapefruit juice into a small saucepan (keep back the segments). Add the shallots and crushed coriander. Bring to the boil, then turn down the heat and simmer for 3 minutes until the juices have become a little thicker. Remove from the heat and stir in the extra-virgin olive oil. Put to one side.
Heat a thin layer of olive oil in a large frying pan and add the salmon, skin side down. Cook over a medium-high heat for 3-4 minutes until the skin is crisp, then carefully turn and cook for 2-3 minutes more, until the fish is nearly cooked through with just a thin layer of pink left in the middle. Remove from the heat and put onto plates, with the skin facing upwards.
Season the citrus dressing, being generous with the pepper, then gently stir in the dill and fruit segments. Add half the lemon juice, then spoon the sauce around and over the fish. Add extra lemon to taste.
