Soup with Potatoes made from Salmon Heads. Smoked if you can
1. Soften Onions in butter.
2. Add Salmon parts and the rest of the ingredients except a bit of the dill for garnish.
3. Cover with water and simmer for 20 minutes.
4. When potatoes are soft it is time to strain the soup. This will take some time but it is worth it. Fish out the salmon parts and flake the meat. Separate the good bits from the bad. You have to take the potatoes out and look for the fish bones in the soup. A fine strainer can be a great help.
5. Dress with some Cream and serve with fresh dill.
I smoke the fish head prior to making the soup.
