Clean and cut the 4 medium sized leeks into crowns - approximately 2 to 3 cups
Saute the leeks in the olive oil on medium-low heat
Add the chicken broth (bone broth), dill, and thyme
Bring to a strong simmer
add the coconut milk
de-skin salmon and cut into 1-inch chunks
add salmon chunks
simmer until fish is cooked (about 10 minutes)
serve immediately
