For loaf: Drain salmon, reserving liquid, and break up into fine pieces. Add the chopped onion, eggs and enough cracker crumbs so that you can shape it into a loaf. Place in greased pan and bake in 375 degree oven until cooked through.
For the sauce: When the loaf is about half cooked, melt butter in a small frying pan, add flour, mix well and add milk to make a white sauce. Cook until thickened. Add salmon liquid. While sauce is still hot, beat the egg into it, slowing beating the sauce as you add the egg. Serve over the loaf.
