Fish patties and salad
1. Cook sweet potato in salted boiling water for 10 minutes until tender
2. Drain the return to the pan and place on a low heat for 1 minute until dry
3. Remove from the heat and mash lightly with a fork. Add the milk and beat until very smooth.
4. Set aside to cool completely
5. Flake the salmon into a bowl, add mashed sweet potato and shallots. Season and mix
6. Divide into 6 patties
7. Dust with flour, brush with a beaten egg and coat with breadcrumbs.
8. Place on a tray and refrigerate
9. To make salsa, combine all the ingredients in a bowl.
10. Heat the olive oil in a large, non-stick pan on medium. Cook the patties for 4-5 minutes each side until golden.
11. Serve with the tomato salsa and lemon
