Drain salmon and place in mixing bowl.
Clean fish, removing all skin and bones; then flake with fork.
Lightly beat eggs and add to bowl, along with salt and pepper (both to taste).
Crush crackers and add to bowl; mixing well.
Form into 6-8 small patties, and saute in pan with swirl of oil, cooking until browned on both sides.
Remove from pan and drain on paper towels before serving.
