1 Preheat oven to 375 F.
2 Sprinkle the salmon with salt and pepper.
3 Spread mustard on top of each filet and then tightly wrap the salmon in prosciutto. You may find you need more or less prosciutto depending on the size of the filets.
4 Place filets on baking sheet and cook for approximately 15 minutes.
Garlic Bok Choy
1 Heat oil in a large skillet over medium heat. Add garlic and allow it to cook for approximately 1 minute.
2 Add bok choy to the skillet and pour in soy sauce. Cook for 3 to 5 minutes, until the greens have wilted.
3 Toss in salt and pepper prior to serving.
