Dice raw bacon and cook until crispy.
Sear Salmon over medium high heat, until cooked through (about 4 minutes a side).
Fine dice onion and mix into broken up cooked Salmon. Add sour cream, horseradish, Dijon and salt and pepper to taste (capers too if desired).
Serve Salmon Salmon on romaine alone or romaine and toasted sour dough bread as an open faced sandwhich. Sprinkle bacon and snipped chives on top of Salmon Salad.
