1. Soak 1 or 2 cedar planks in cold water for 2 hours. Remove and shake off water.
2. Rinse the salmon fillets under cold water and pat dry with paper towels. This removes the excess water, which can start to steam the fish.
3. Season the flesh side with salt and pepper. Using a brush, spread the mustard over the fish to cover. Make sure to get some on the thick vertical part of the fillet. Crush the brown sugar in a bowl with a fork, then sprinkle over the mustard.
4. Place the cedar planks on a medium-hot grill for 3 minutes, until you can smell smoke. The turn the planks over and place the coated fillets on the planks, skin side down. Cover the grill and cook about 20 minutes, or until the fish is cooked through (internal temp of 135 F). If you planks catch on fire, mist with a spray bottle of water and move to a cooler part of grill. Serve from plank.
For the pineapple:
1. Mix the oil and spices, leaving out only the rum.
2. Peel pineapple and cut into 8 wedges. Place in bowl of marinade and stir to coat.
3. Grill wedges over high heat until golden brown, brushing oven with marinade and turning several times, about 10 minutes total.
4. Place on platter, brush with rum, and sprinkle with lime zest.
For the asparagus:
1. Brush with oil and season with salt and pepper.
2. Grill over high heat for 3-4 minutes, turning once or twice, until tender and slightly charred.
I have used canned pineapple as well (rounds in juice).
