Preheat broiler on low setting.
Rinse salmon fillets and pat dry. Season salmon with salt and pepper to taste and place the filets in a dish lined with non-stick aluminum foil. Spread pesto sauce equally over the top of each piece of salmon. Sprinkle enough panko crumbs to cover the pesto and press to adhere. Sprinkle each portion with 1 Tablespoon of shredded parmesan. Spray with cooking spray.
Place under the broiler and check often to ensure they are not browning too much. If the top of the salmon is becoming too brown, place on a lower oven rack and/or place a sheet of foil over the top. Cotinue broiling until salmon is cooked to your taste, usually 10-15 minutes.
For more flavor, you can also prepare a similar crust for the bottom of each salmon fillet.
