Marinated salmon steaks
1. Thaw fish, if frozen. Set aside. For dressing, combine orange juice concentrate, soy sauce, honey, cooking oil, sesame oil, and ginger in a small bowl.
2. Place salmon on the ungreased rack of a broiler pan. Broil 4 inches from heat for 5 minutes. Using a wide spatula, carefully turn salmon over. Brush with 1 tablespoon of the dressing. Broil for 3 to 7 minutes or until salmon just begins to flake easily when tested with a fork. Cover and keep fish warm while preparing greens.
3. Place greens and orange sections in a large bowl. Bring remaining dressing mixture to boiling in a large skillet. Add red pepper strips. Remove from heat. Pour over greens, tossing to mix. To serve, divide greens among 4 dinner plates. Top each serving with a salmon steak.
