Core about 30 plum tomatoes and cut a shallow x in the end opposite the stem. Bring a large pot of water to a rolling boil. Plunge about 4 tomatoes at a time in the boiling water for a count of 15 seconds. Remove and transfer to cold or ice water. Continue with remaining tomatoes.
Take each cool tomato and peel skin by grabbing loose end at the x cut earlier. Cut tomato in half at its equator an squeeze or scoop seeds from cavities using your fingers.
Chop tomatoes into chunks or dice as desired. Wash and chop remaining vegetables.
Combine all the ingredients in a large pot and bring to a simmer for 10 minutes.
Can as usual.
Adjust variety of hot peppers to taste. Seeded Bananas are mild, Habenero and Jalepeno are medium and Cherry Bombs or Thai peppers bring the heat. Yields 50 half cup servings.
