In large pot (I use my 21qt pressure cooker) add tomatoes, all peppers, onions, garlic, and cilantro. Add salt, vinegar, lemon juice, sugar, and tomato paste. Simmer 1 hour on med to low heat stirring occasionally as not to burn. Sample part way through add more peppers for desired heat. Add cornstarch and water mixture to thicken. Stir constantly so there isn't lumps. Pour in to pint jars. Pressure at 5lbs for 5 min.
Using jalapeƱos makes it a little bitter.
Batch for 2022 used 20 seranos, 4 habanero and 3tb red pepper flakes
