Fire roasted tomato based mild salsa

1. Place Serrano chillies and garlic cloves on a parchment lined baking sheet. Drizzle with oil and lightly season with s&p, roast in oven until slightly charred
2. Once cooled, clean, de-vine and de-seed garlic and chillies. Mince and set aside
3. Line a deep heavy bottomed pot with shortening
4. Open a 100oz can of fire roasted tomatoes and pour the lard lined pot
5. Mice onion and add to pot along with the minced garlic and chillies
6. Bring to a boil and reduce by half
7. Add water, salt and cilantro steams. Bring to a simmer and reduce to back of spoon.
8. Pour into appropriate container. Lid, label and refrigerate
