Stew peeled & chopped tomatoes over low heat until liquid is reduced (or dip off liquid and save for soup base). Chop vegetable while tomatoes stew. Add chopped vegetables, spices and vinegar to tomatoes and cook together at least 45 minutes. Seal and label.
