Heat sugar in medium/heavy duty saucepan over medium heat. Stirring constantly. Sugar will form clumps and eventually melt into a thick brown, amber colored liquid. Once sugar is melted immediately add the butter and still until well combined. Caramel will bubble rapidly. After combined cook for 1 minute without stirring. Very slowly add the heavy cream it will again bubble. Stop stirring and allow to boil for 1 min. Remove from heat and allow to cool.
