Use sliced sourdough bread, then add two pats of real butter on one side of each piece of bread and sprinkle fresh grated parmesean over that. Press the cheese into the butter. Top with sprinkled basil.
In a frying pan on med high heat, place the parmesan cheese side down and add the slices of cheese, bacon and tomato, then top with the other piece of bread parmesan cheese side up. Fry on both sides until browned, 3minutes/side. Use a sandwich press or the back of a spatula to press the sandwich into the pan while frying. Salt both sides and cool immediately after frying.
