These are a hit at the Johnson Heritage House Bed and Breakfast in Vancouver. They are best served with maple syrup. Optionally include frozen blueberries or top with sliced bananas
Heat a frypan or griddle.
1. Combine cornmeal, flour, baking powder, salt and sugar in a large bowl.
2. In a separate bowl, mix the eggs, milk, oil. Combine with the dry ingredients, and stir until lumps are gone.
3. Let sit 10 minutes to allow mixture to thicken.
4. Cook on griddle, until both sides are golden.
