Mix chili/salt/paprika/cumin and reserve 1 teaspoon for later
Combine with breadcrumbs and mix well
Melt butter in medium skillet over medium heat
Cook celery and onion 5-7 minutes
Add corn, cheese, parsley and breadcrumb mix and mix well
Loosen skin or slice chicken breast to form pocket
Stuff pocket with 1/2 tablespoon of seasoning mixture
Place skin side up in baking dish and sprinkle with remaining seasoning
Cover with foil and bake at 350F for 35-45 minutes
