In a large bowl, beat cream cheese until creamy. Add sour cream, chilies, olives, cheese, salsa and onion. Beat on medium until completely mixed. Stir in spinach. Spread evenly over tortillas. Roll up tightly and cut into 6 slices. Skewer each with a toothpick. Serve immediately or chill.
Use sour cream and salsa for dipping.
