Ground Buffalo & beer make this an amazing one-of-a-kind comfort food for cold evenings!
In large stock pot, brown ground buffalo (in bacon grease, if you have any. If not, then just a bit of Olive Oil as buffalo is very lean). DO NOT DRAIN! Add onion and cook for a few minutes. Add tomato paste, stir and cook another 2-3 minutes. Add tomatoes, tomato sauce, chili powder, cumin, paprika, garlic powder and beer. Simmer for 1 1/2 hours. Add corn, chicken broth, oregano and cilantro and simmer uncovered for another hour, stirring frequently to prevent burning. If the chili is to thick for your liking, add the flour. If chili is too thin for your liking, add the beef broth, 1/4 cup at a time, until chili has reached desired consistency. Add salt and pepper, if you wish. Simmer uncovered 1 more hour.
I like to taste it often after adding the beer to ensure I like how the spices have blended. Sometimes, we like it a bit spicier and will add a bit more chili powder and cumin. If my niece is here, we'll add beef broth to lessen the heat of the chili. Taste test and adjust, as necessary!
