Although the real name for this dish never stuck in my memory, as a kid this was my favorite dish my mother would make.
Boil salted water for Tortellini
1) Sauté garlic and mushrooms in olive oil for 3-4 minutes on low - medium low heat
2) Add torn prosciutto and cooked peas, Sauté for another 3-4 minutes or until all cooked
4) Cook Pasta
5) When pasta is cooked strain and add directly to pan that has all the other ingredients.
6) Add 1 cup heavy cream, reduce slightly.
Add parmesan cheese and toss to combine!
Enjoy!
Fresh Pasta cooks Very fast….Usually when it floats, about 1-2 minutes. Taste to check!
