Chicken cooked in an assortment of sweet and spicy peppers, onions in a tomato based sauce served over angel hair pasta - and of course, topped with cheese
Preheat oven to 400.
Put Olive Oil in a skillet over med- high heat.
Pat chicken dry and season it using the Italian seasoning and s&p. Brown chicken and remove to a baking dish. (9x13)
Throw your onions and peppers in pan and cook for about 4-5mins just to get them started and add the red wine and the honey to get the brown bits up and deglaze the pan.
Put peppers and onions on the top of chicken. Cover with tomatoes and pasta sauce.
Cook for about 30-40mins until chicken is cooked through. Add cheese on top of chicken and cook until melted.
Remember - if you chose hot peppers, which I recommend using a some, regulate the heat on this dish. It can get really, really hot if you use too many peppers and will not turn out good at all. I use one jalapeno w/o seeds for a little heat. You can add mushrooms and spinch to this dish to get some extra veggies in your meal.
I serve this over angel hair pasta. Pasta down, then chicken & sauce. Garlic bread and a nice salad. YUM!
