Tomato Sauce and Meatballs
Sauce:
Open all cans of tomato sauce and paste. Slice and quarter pepperoni. Peel and cut the ends off of 2 medium yellow onions. Place cloves in each end. Peel 4 whole carrots.
1) In a large sauce pot heat oil and simmer garlic for 1 minute.
2) Stir in tomato paste.
3) Stir in tomato sauce.
4) Sprinkle oregano.
5) Add all other ingredients and simmer 1 hour.
Meatballs:
Preheat oven to 350. Spray two 13x9 pans (Pyrex baking dish) with cooking spray (Pam).
1) In a large bowl combine all dry ingredients.
2) Add ground beef and eggs.
3) Mix well with hands.
4) Roll into balls and place in pans.
5) Bake 20 minutes, then turn and finish baking for 15 minutes.
Add balls to sauce pot when finished baking. Simmer sauce for 3-4 hours with lib partially on. Remove bay leaves, carrots, and onion prior to serving.
Extra sauce and meatballs freezes well in Tupperware containers.
