Great German dish!
In a dutch oven add a little oil and brown meat. Pour vinegar and water over meat. Add all other ingredients except kitchen bouquet. Cover and simmer for about 3 hours.
Remove meat from pot and cut into 1.2" to 3/4 inch slices. Discard bay leaves. In a blender mix remaining liquid and onions and return to pot. Thicken liquid with about
3 tablespoons flour mixed with a little cold water. Add kitchen bouquet for a deep rich color and return meat to pot and cook for an additional 1 to 2 hours or until meat
is very tender.
Serve with spaetzle or noodles..
