Ingredients (We usually quadruple this recipe):
8 oz. Pork Sausage, finely crumbled
¼ cup Finely Chopped Onion
1-14oz. Can Sauerkraut (We usually just grab a 2# bag, if doubling) well drained
2 T Bread Crumbs (Panko!)
4 oz. Cream Cheese, softened
2 T Snipped Parsley (Or 1t Dried Parsley)
1 t Prepared Mustard
¼ t Garlic Powder
½ t Salt
1/8 t Black Pepper
Flour to roll balls in
Panko Bread Crumbs to roll balls in-Season with additional salt, pepper and garlic
2 Eggs, Beaten
¼ cup Milk
Oil to deep fry balls in
Dipping sauce, optional. Ranch or 1000 Island are the preferred choices at my house. Honey mustard or Yum Yum sauce are other suggestions.
In skillet, cook sausage and onions until sausage is browned, drain.
In a bowl, add drained sauerkraut and and 2T breadcrumbs. Add cream cheese, parsley, mustard, garlic, salt and pepper. Mix well and chill for at least 2 hours.
Shape mixture into ¾-1 inch balls.
Prepare breading station. In one container, add flour. In second container, beat milk and eggs together. In third container add breadcrumbs and seasoning.
Roll balls in flour, then egg mixture, then breadcrumbs.
Fry in oil until golden brown.
