Suggest a better descriptionToss the sweet potatoes, red onion, and apples with the 2 tbsp oil, salt, pepper and cayenne. Spread on sheet pan. Bake at 425 degrees for 10 minutes. Add the sausage (whole or sliced) and sage, bake an additional 20 minutes. Massage the kale with the remaining tbsp of olive oil. Add to the pan and bake another 5 minutes.
Remove from oven, toss with the balsamic vinegar and dijon mustard.
