Suggest a better descriptionTrim ends from zucchini. Do not peel. Cut into 8 pieces Cook in boiling salted water for 8 to 10 minutes until tender crisp; drain saving 1/2 cup liquid. Chop zucchini. Brown sausage and onion; drain. Add zucchini, liquid, and remaining ingredients, except for the last 2 tablespoons Parmesan cheese. Mix well. Pour into greased casserole dish. Sprinkle 2 tablespoons Parmesan cheese on top. Bake at 350 degrees for 40 minutes or until set.
