Remove seeds from peppers and finely mince.
Place cream cheese in stand mixer and cream until soft and smooth.
Add sausage and peppers- mix well.
Unroll Cressant rolls and press together each package to form 2 large rectangles.
Spread cream cheese mixture over the rolls.
Roll up jellyroll style.
Cut each long roll in two, roll in parchment or plastic wrap and chill.
Just before cooking place one roll in freezer and chill for 30 minutes for easier slicing.
Slice into VERY THIN slices.
Bake at 375 degrees for 9-12 minutes until lightly browned.
