Ideal recipe for the holidays. Make these delicious meat filled crepes ahead of time and simply heat and serve for breakfast. These will quickly become a holiday tradition.
Make the crepes ahead of time using a crepe batter recipe. I like to use the Polish Crepe Batter recipe.
To create the meat filling, cook the sausage and onion together in a skillet over medium heat, stirring until sausage crumbles and is no longer pink. Drain the liquid and add 1 cup cheddar cheese, cream cheese, and marjoram, stirring until cheese melts.
Spoon 1-2 tablespoons of filling down the center of each crepe. Roll the crepes up gently and place seam side down in a lightly greased baking dish. Mix the sour cream and softened butter together and spoon over top of the crepes. Bake uncovered at 350 degrees for 30 to 45 minutes. When crepes start to brown on bottom, sprinkle with remaining cheddar cheese, let melt, and serve.
