Add olive oil to frying pan along with onions, tomatoes, and garlic. Sauté with sausage also adding in the tomato paste. Add salt and black pepper to taste. Take a couple slices of thin French bread and toast for 2 minutes in the oven. Once the French bread is toasted place 2 tablespoons of mixture on each bread. Take the shredded cheese of your choice and place on top. Place in the oven for 5 minutes until cheese melts. Add fresh parsley for presentation touch.
