Slice sausage in half lengthwise and then cut into quarter inch half ovals.
Brown sausage on all sides and drain.
Add onions and carrots and saute until tender.
Add kale and garlic (if using).
Cover and continue cooking for several minutes.
Add remaining ingredients, cover and simmer for an hour.
