Brown the sausage, rinse and drain meat. Put cream cheese in a medium mixing bowl; add meat and chives. Mix well and divide mixture into 8 portions. Lay out 8 (8X10) pieces of wax paper. Put one crescent rectangle (2 connected triangles) on each piece of wax paper and push together the perforations. Spread a portion of mixture on each rectangle and then roll up. When rolled up correctly, the crescent roll will be about 10 inches long.
These pastries can be frozen for up to a month. When you are ready to serve them defrost for 1 minute in microwave and then cut into 1 inch thick pieces. Place pastries pieces on cookie sheet sprayed with Pam cooking spray. Bake at 400 degrees for 10 to 15 minutes or until slightly golden.
