Saute onion and peppers in olive oil until begin to soften. Add garlic and saute 1-2 minutes more. Remove from heat.
Saute sausage pieces in olive oil until well-browned. Add onion & peppers back to pot.
Add remainder of ingredients except parmesan cheese and simmer for about 45 minutes.
Serve with parmesan cheese if desired.
