A little creole sausage recipe shared by a friend.
Place sausages in medium pot of boiling water and cook for 4 minutes. Drain and cut sausages into 1 inch slices. At the same time, heat oil in large skillet over medium high heat and saute onions until translucent (5 minutes or so).
Add sausages and fry until browned (5 minutes or so).
Add everything else except for the rice. Reduce heat to medium, then cover for 20 minutes.
Add rice and mix. Cover for another 15 minutes. Remove lid and let it air out for 5 minutes. Mix it occasionally until you see the rougail have a nice consistency. Don't be shy to add a little but of chicken broth if needed. Do not let the rougail dry out.
