Directions:
Preheat oven to 375. In a large bowl, combine sausage, zucchini, squash, onion, carrots, olive oil, lemon pepper, and salt. Spray foil sheets with nonstick cooking spray. Divide mixture into foil sheets and wrap up tightly. Bake at 375 for 25-30 minutes.
Freezing Directions:
Assemble packets as directed above but do not bake. Place foil packets into a gallon freezer bag. Label and freeze. To serve: thaw in fridge. Preheat oven to 375. Place packets on a baking sheet and bake at 375 for 25-30 minutes.
