In a large skillet, using 1 tablespoon oil saute the onion until soft and lightly golden, about 7-9 minutes total. Add the garlic the last 2 minutes. Set aside. Using another tablespoon of oil, in the same skillet saute the green, red and yellow peppers for 8-10 minutes until softened and lightly browned. Add the peppers to the onions that are set aside.
Using the remaining oil and same skillet, cook the sausages until nicely browned on all sides, about 10 to 12 minutes. Drain on paper towels to remove excess grease. Wipe clean the skillet.
At this point, return onions, peppers and sausage to the skillet or you may use a larger pot to accommodate all the ingredients.
Add the tomatoes, tomato paste, water, parsley and oregano. Cover and cook gently for 45 minutes to an hour.
The sausages are great to use for sausage and pepper grinder or may be used to top rice or pasta.
