Add enough oil to barley cover bottom of skillet and heat medium to medium high just until oil shimmers.
I use a stainless or cast iron skillet because you get a better pan sauce. (more brown bits)
Cut breasts across grain 3/8 to 1/2" thick and flatten by half.
cook until brown and turn over and cook other side until brown.
Serve while hot or keep warm while you make pan sauce.
