Suggest a better descriptionDry each filet with paper towel. Coat each filet in flour, seasoned with salt and pepper. Heat skillet over medium heat with butter/olive oil combo. Add the filets. Increase heat to medium high. Cook each side for 3 minutes. Remove and put in warmer drawer. Deglaze pan with white wine, butter and capers. Plate fish and drizzle sauce over each filet.
